In the first grinding stage, the solid cocoa nibs are converted into a plasticized state by means of beater plate mills.

In the subsequent grinding stages, the plasticized cocoa liquor is further refined in ball mills. The final fineness of the cocoa liquor is determined by the geometry of the grinding balls and the number of grinding stages.

Cocoa nibs grinding

To produce cocoa liquor, the roasted cocoa nibs are ground in a two-stage process. In the first step the cocoa nibs are transferred from the solid phase into the liquid phase, the cocoa liquor. After pre-grinding, cocoa liquor shows a coarse particle size distribution. The final fineness of the cocoa liquor is produced in the second process step, fine grinding.
